Refreshing Energy

Today I like to share a recipe for an energy refreshing lunch my partner Rolf made for us:

Grate 2 apples, 1/4 white cabbage, 1/4 red cabbage and 1/2 celery root (all medium size). Add then juice of 1/4 lemon and a full tablespoon organic mayonnaise and mix all ingredients with a fork. Add a little sea salt and grind and add black pepper to your liking. Enrich the already great taste by adding a dozen black grapes cut in half and 1/2 a cup of pomegranate seeds, which are rich in vitamin C, potassium, and fiber.
